Rhode Island Clam Chowder: A Quahogging Adventure

This clear-broth chowder is a tasty and healthier alternative to the traditional New England-style chowder that calls for heavy cream and a whole lot of butter.


Fresh clams 1 Pound , shucked
Chicken sausages 2 , sliced diagonally into 1/4 inch bites (apple chicken sausages used)
Chicken stock 3 Cup (48 tbs)
Onions 2 Medium , diced
Roasted garlic 1 , minced
Celery stalk 2 Large , chopped finely
New potatoes 2 Pound , cubed (into bite
Fresh dill 3 Tablespoon , finely chopped
Fresh thyme 3 Tablespoon , finely chopped
Ground black peppercorn 2 Tablespoon
Kosher salt 2 Teaspoon
Red pepper flakes To Taste (Optional)
Lemon zest 1 Medium
Fresh cilantro 1/4 Cup (4 tbs) , finely chopped
Olive oil 2 Tablespoon



1. Place the clams shells in a pot; pour chicken stock and water, enough to cover the shells.

2. Add pinch of salt and over low heat simmer the shells, stirring occasionally while preparing the other ingredients.

3. Place the clams in a separate dish.

4. Strain the clams and juice through cheesecloth into a bowl to catch any sand or sediment and set aside. Reserve the clam juice; rinse the clam meat in cold water as well.

5. In a stock pot pour olive oil and sauté the onions and celery until translucent.

6. Add the sausages and stir, add the potatoes, garlic and sprinkle salt and ground black pepper, stir.

7. Add the clam juice and bring it to a boil, reduce the heat and simmer.

8. Pour the clam shell stock using a cheese cloth; continue to simmer for 20-25 minutes, stirring occasionally.

9. During the last 5-6 minutes add the clams, dill, thyme, lemon zest and cook until the clams are tender but not rubbery.

10. Adjust the seasoning at this point.

11. Before serving add the lemon juice, stir to combine.

12. Garnish with cilantro and sprinkle red pepper flakes if desired.
