Creamy Slow Cooker Cauliflower Chowder

Perfect for a cold evening, this creamy slow cooker cauliflower chowder is super comforting.


Cauliflower head 1 , cut into florets
Celery stalk 2 , chopped
Yellow onion 1 , finely chopped
Chicken stock 4 Cup (64 tbs)
Grated cheddar cheese 2 Cup (32 tbs)
35% cream 250 Milliliter
Bay leaf 1
Dried thyme 1/2 Teaspoon
Rosemary 1/2 Teaspoon , minced
Fresh chives To Taste (for garnish)
Coarse salt To Taste
Pepper To Taste



1. Place cauliflower florets, celery and onions in a slow cooker.

2. Add thyme, rosemary and bay leaf, and season with salt and pepper.

3. Pour in chicken broth, cover and cook on high for 1-2 hours (or on low for 3-4).

4. Remove and discard bay leaf, then blend until smooth.

5. Mix in heavy cream and 1 1/2 cups cheddar cheese, stirring until smooth.

6. Adjust seasoning, if necessary.


7. Garnish with remaining cheese and fresh chives.
