Ingredients

Dessert chocolate pieces 1/2 Pound (small size)
Rum 3 Tablespoon
Soft unsalted butter 1/2 Pound
Castor sugar 1 Ounce
Eggs 2 , separated
Grated blanched almonds 5 Ounce
Salt 1 Pinch
Butter biscuits 12 (1 x 1/2 inch size)
Icing sugar 2 Tablespoon (adjust quantity as needed)
Double cream 6 Tablespoon , whipped

Directions

GETTING READY

1. Lightly grease the bottom and sides of 2 1/2-pint bread with vegetable oil.

MAKING

2. In the top of a double saucepan or in a basin over a pan of water, melt chocolate, over a low heat, stirring constantly.

3. Stir in the rum, when all the chocolate is dissolved.

4. Remove the pan from the heat.Cool to room temperature.

5. In a large heavy bowl cream the soft butter till it gets light and fluffy.

6. Beat in the sugar. Add egg yolks one at a time.

7. Stir in the grated almonds and cooled chocolate.

8. In a separate bowlwhisk egg whites and salt, until they are stiff enough to cling to

the beater in soft peaks.With a rubber spatula, fold them into the chocolate mixture.

9. Gently fold in the cut-up biscuits, discarding the biscuit crumbs.

10. Spoon the greased in a greased baking dish.Smooth the top, to spread it evenly.

11. Cover it tightly with a sheet of plastic.

12. Refrigerate for at least 4 hours, until the loaf is very firm.

13. Unmould the loaf an hour or so before serving time.Run a sharp knife around the sides of the pan and dip the bottom into hot water for a few seconds.

14. Place a chilled serving dish upside down over the tin and, grasping both sides, quickly turn the plate and tin over.

15. Rap the plate on the table; the loaf should slide out easily or else repeat the process.Smooth the top and sides of the unmoulded loaf, and then return it to the refrigerator.

16. Sift a little icing sugar over the top.

17. Cut the loaf into thin, easy to eat slices.

SERVING

18. Serve Dolce Torinese chilled with whipped cream.
