Chocolate Cream

Plain chocolate 4 Ounce
Butter 2 Ounce
Golden syrup 1 Ounce
Instant coffee 1 Teaspoon
Single cream 3 Tablespoon
Orange juice 4 Tablespoon
Cointreau 2 Tablespoon
Egg white 1
Double cream 4 Tablespoon



1) Chop the chocolate into little pieces. Melt the pieces over a double boiler.

2) Add in butter, golden syrup and coffee. Stir till the chocolate has melted completely.

3) Add in the cream and orange juice. Beat to mix.

4) Take the mixture off the flame. Continue to whisk once in a while till the mixture become creamy and thick.

5) Add in the cointreau.

6) Gently fold in a stiffly whisked egg white.


7) To serve, take 5 glasses.

8) Transfer the chocolate cream equally into each of the glasses. Let it rest for a few minutes.

9) Garnish the glasses with whipped cream and chocolate shavings.
