Chocolate Candied Orange Peel

Oranges 4
Granulated sugar 2 Cup (32 tbs)
Chocolate 6 Ounce , melted (Semi Sweet / Bittersweet)



1) Using a sharp knife, remove the peels from the oranges

2) Cut into strips of 21/2 inch

3) Into a pot of water, place the strips and bring to a boil

4) Cover and simmer for 15 minutes

5) Drain and add more water and repeat the process

6) Boil and cook the peel for an additional 15 minutes and drain them

7) Into a saucepan, mix 1 cup of sugar with 6 cups of water

8) Bring to a boil

9) Add the peel and cook for 1 hour and 15 minutes till the peel is soft and tender and has absorbed all the syrup

10) Into a large sieve, drain the peels

11) Into a shallow dish, spread the peels

12) Coat the peels in granulated sugar and place onto a wire rack

for drying

13) Allow to dry overnight


14) Coat the peel halfway into the chocolate and place onto waxed paper


15) Serve along with some vanilla pound or tea cake
