|Margarine||1/2 Cup (8 tbs)|
|Sugar||1/2 Cup (8 tbs)|
|Vanilla extract||1/2 Teaspoon|
|Unsweetened chocolate squares||4 Ounce , melted (2 Squares, 2 Ounces Each)|
|Sifted all purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Mint filling||1 Cup (16 tbs)|
|Confectioners' sugar frosting||1 Cup (16 tbs)|
|Colored sugar||3 Tablespoon|
Cream margarine and sugar.
Beat in egg, vanilla, and chocolate.
Add milk and mix.
Add sifted flour, baking powder and salt.
Shape dough in 2 rolls, 2 inches in diameter; wrap in wax paper and chill overnight.
Cut into thin slices and bake on ungreased cooky sheet in preheated moderate oven (350°F.) for 10 minutes, or until done; cool.
Spread Mint Filling on half of cookies.
Top with remaining cookies.
Prepare Confectioners' Sugar Frosting, adding a few drops of peppermint extract and green food coloring.
Frost cookies and sprinkle with colored sugar.
Makes about 5 dozen double cookies.
