Chocolate Mint Cookies

Ingredients

Margarine 1/2 Cup (8 tbs)
Sugar 1/2 Cup (8 tbs)
Egg 1
Vanilla extract 1/2 Teaspoon
Unsweetened chocolate squares 4 Ounce , melted (2 Squares, 2 Ounces Each)
Milk 1 Tablespoon
Sifted all purpose flour 2 Cup (32 tbs)
Baking powder 1 Teaspoon
Salt 1/2 Teaspoon
Mint filling 1 Cup (16 tbs)
Confectioners' sugar frosting 1 Cup (16 tbs)
Colored sugar 3 Tablespoon

Directions

Cream margarine and sugar.

Beat in egg, vanilla, and chocolate.

Add milk and mix.

Add sifted flour, baking powder and salt.

Shape dough in 2 rolls, 2 inches in diameter; wrap in wax paper and chill overnight.

Cut into thin slices and bake on ungreased cooky sheet in preheated moderate oven (350°F.) for 10 minutes, or until done; cool.

Spread Mint Filling on half of cookies.

Top with remaining cookies.

Prepare Confectioners' Sugar Frosting, adding a few drops of peppermint extract and green food coloring.

Frost cookies and sprinkle with colored sugar.

Makes about 5 dozen double cookies.
