Schezwan Noodles by Tarla Dalal

These noodles are very popular and are loved by one and all. They are spicy and colourful. They are worth a try !

Ingredients

Oil 3 Tablespoon
Garlic 1 Tablespoon , chopped finely
Cabbage 3/4 Cup (12 tbs) , chopped
Capsicum 3/4 Cup (12 tbs) , thinly sliced
Carrot 3/4 Cup (12 tbs) , thinly sliced
Bean sprouts 1/2 Cup (8 tbs)
Salt To Taste
Boiled noodles 2 Cup (32 tbs)
Schezwan sauce 1/2 Cup (8 tbs)
Chili oil 1 Tablespoon

Directions

MAKING

1. In a wok, heat oil, add garlic, cook for few seconds. Add cabbage, capsicum, carrot and bean sprouts for over high flame for a while. Season with salt and stir fry for few seconds.

2. Add in the noodles, schezwan sauce, sprinkle some more salt, toss and cook until heated through. Finaly add chili oil and mix.

SERVING

3. Serve hot with your choice of beverage.

TIP

For making chili oil: In a pan heat 1/2 cup oil, add 7-8 broken red chilies, cover the pan and put the flame off. Pass through a sieve.
