This is an all time favorite amongst soup, loved by everyone. The mild flavor of this soup makes it a hit among the kids, who love to gorge upon this.
Vegetable stock | 4 Cup (64 tbs) | |
Sweet corn kernels | 3/4 Cup (12 tbs) | |
Sweet corn | 3/4 Cup (12 tbs) , grated | |
Carrots | 2 Tablespoon , finely chopped | |
Green onion | 1 Tablespoon , finely chopped | |
Sugar | 1 Teaspoon | |
Salt | To Taste | |
Cornstarch | 3 Tablespoon | |
Water | 1/4 Cup (4 tbs) |
GETTING READY
1. In a small bowl, mix together corn starch and water and set aside.
MAKING
2. In a large pot, put the vegetable stock and sweet corn kernels. Cover and cook over medium heat for 10 minutes.
3. Add in the grated corn, carrot and green onion and simmer for another 5 minutes.
4. Stir in the corn starch slurry and simmer for some more time.
5. Season with the sugar and salt and mix well.
SERVING
6. Serve hot with some bread croutons if you like.
