Oil | 1 Teaspoon | |
Green chili | 1 , slitted | |
Garlic | 1 Teaspoon , finely chopped | |
Sugar | 1/4 Teaspoon | |
Carrot | 1/4 Cup (4 tbs) , finely chopped | |
Cabbage | 1/4 Cup (4 tbs) , finely chopped | |
Onions | 1 Tablespoon , finely chopped | |
Green bell pepper | 1/4 Cup (4 tbs) , finely chopped | |
Mushrooms | 1/4 Cup (4 tbs) , finely chopped | |
Water | 3 Cup (48 tbs) (reserve 2 tbsp. for the corn starch slurry) | |
Corn starch | 1 Tablespoon | |
Fresh lemon juice | 1 Teaspoon | |
Low sodium soy sauce | 1 Tablespoon | |
Salt and pepper | To Taste |
MAKING
1. In a deep pan, heat the oil and add in the slit green chili. When it changes the color, take it out and discard the chilli.
2. Add in the garlic and sugar and sauté for a while. Followed by all the veggies, sauté for a minute and pour in the water. Bring to a boil and let it simmer for 5 minutes on low heat.
3. Meanwhile in a small bowl, mix together water and corn starch.
4. Pour in the slurry into the soup and mix well. Simmer for another 2 minutes on high heat.
5. Season with low sodium soy sauce, lemon juice, salt and pepper. Mix well and immediately turn off the stove.
SERVING
6. If you wish you can garnish the soup with green onions and serve.
