Vegetable noodles is a very popular Chinese dish. This is a hit among the elders as well as kids. You can use whole wheat noodles to make it healthier.

Peanut oil | 2 Tablespoon | |
Onion | 1/2 , sliced | |
Garlic | 1 Tablespoon , finely chopped | |
Ginger | 1 Tablespoon , finely chopped | |
Green beans | 50 Gram , chopped | |
Carrot | 1 , julienned | |
Green bell pepper | 1 , julienned | |
Mushroom | 1/4 Cup (4 tbs) , sliced | |
Soy sauce | 2 Teaspoon | |
Chili sauce | 1 Tablespoon | |
Salt and pepper | To Taste |
GETTING READY
1. In a large pot, bring water to boil and add in the noodles to the boiling water. Cook the noodles until al danté.
2. Drain the noodles in a colander and run cold water over it to prevent it from sticking to each other. Set aside.
MAKING
3. In a wok, heat the oil on high flame. Add in the onion, garlic and ginger. Sauté for a few minutes.
4. Add in the green beans, carrot, green bell pepper and mushroom. Sauté the vegetables on high flame.
5. Add in the noodles and season with salt, pepper, soy sauce and chili sauce. Stir well.
SERVING
6. Serve piping hot with tomato ketchup.
