Stir Fried Chicken in Hot Garlic Sauce

In Chinese cooking, garlic is used abundantly. And, here is a simple, classic recipe of the Chinese kitchen, which is now a popular take-out dish. The ingredient list of this recipe is quite large, but preparation is simple.

Ingredients

Chicken breast 1 Pound , cubed
Toasted sesame oil 1 Teaspoon
White pepper 1/4 Teaspoon , grounded
Peanut oil 2 Tablespoon
Garlic 6 Clove (30 gm) , minced
Ginger 1 Tablespoon , freshly grated
Whole red chili 2
Red onion 1/2 Cup (8 tbs) , sliced
Green bell pepper 1/2 , cut into thin strips
Baby corn 1/4 Cup (4 tbs) , diced
Fresh lemon juice 1 Tablespoon
For the sauce
Rice vinegar 1 Tablespoon
Low sodium soy sauce 1 1/2 Tablespoon
Dark soy sauce 1 Tablespoon
Chinese rice wine 2 Teaspoon
Brown sugar 1/2 Tablespoon
Cornstarch 2 Tablespoon
Chicken stock 1/2 Cup (8 tbs)
For garnish
Chives 1 Teaspoon , finely chopped

Directions

GETTING READY

1. In a large bowl, toss chicken strips with toasted sesame oil and white pepper. Marinate for 10 minutes.

2. In a medium bowl, stir together chicken stock, rice vinegar, soy sauce, dark soy sauce, Chinese rice wine, brown sugar and corn-starch. Set aside.

MAKING

3. Heat a wok or large skillet over high heat. Pour in peanut oil and heat on high.

4. Add in the chicken pieces, spreading it out as much as possible. Sear for 1 minute without stirring until the edges are lightly browned, then stir to cook all sides until just cooked through - about 2-3 minutes more. Transfer chicken to a bowl and set aside.

5. Heat the same wok on low fire, and add in the garlic, ginger, and whole red chili. Stir-fry for about 30 seconds, or until fragrant. Turn up the heat to high, add in the red onion and stir-fry for another 30 seconds.

6. Add in red bell pepper and baby corn cook for one minute.

7. Stir the prepared sauce and pour into the wok, cook until the sauce thickens.

8. Turn the stove off and drizzle lemon juice over the dish.

SERVING

9. Garnish the chicken with chives and serve hot with steamed rice or noodles.
