Fried Dumplings with Cilantro Salad


Ground pork 1 Pound
Green onion stalks 3 , chopped finely
Garlic 3 Clove (15 gm) , chopped finely
Ginger 1 Teaspoon , grated
Lemon grass stalk 1 , grated (around 2 teaspoons)
Cilantro leaves 1 Cup (16 tbs) , chopped
Habanero 1 , seeded and finely chopped
Shaoxing wine 2 Teaspoon
Fish sauce 1 Tablespoon
Palm sugar 1 Tablespoon
Salt 1 Pinch
Pepper 1 Pinch
Cornstarch 2 Teaspoon
Wonton wrappers 35
Cooking oil 1 Tablespoon
For cooking the wontons
Water 1 Cup (16 tbs)
For the sauce
Pineapple slices 1 Cup (16 tbs)
Lemon 1 , juiced
Pineapple juice 1 Cup (16 tbs)
Red chili 1 , finely chopped
Fish sauce 2 Tablespoon



1. In a bowl, combine the ground pork with the finely chopped green onions, ginger, garlic, lemon grass and habanero.

2. Add the Shaoxing wine, fish sauce, palm sugar, salt and black pepper.

3. Add the corn starch and mix well.

4. In a wonton wrapper, spoon a little of the mixture and fold as shown in the video.

5. Heat a pan and pour the cooking oil in it.

6. Place the dumplings in the pan.

7. Pour the water, cover and cook till the water is evaporated. It will be evenly browned on either sides.

8. For the sauce: Chop the pineapple, cilantro, red chili pepper and grate the ginger.

9. In a bowl, add the chopped pineapple, pineapple juice, ginger, chopped red chili pepper, lemon juice, fish sauce and palm sugar. Mix well.


10. On a plate, lay down the cilantro leaves.

11. Add the pan fried dumplings.

12. Pour the sauce and toss well.


13. Serve the warm salad right away with a glass of chilled beer.
