Hunan Onion Cakes

Ingredients

8 inch flour tortillas 12
Sesame oil 6 Tablespoon
Eggs 2 , lightly beaten
Salt To Taste
Finely chopped scallions 1 Cup (16 tbs) (Including Tender Green Portion)
Vegetable oil 6 Cup (96 tbs)

Directions

GETTING READY

1) Place all the ingredients ready in separate bowls.

2) In a large non-stick pan, a bit bigger than one of the tortillas, put oil.

3) Over moderate heat, heat the oil to about 350 to 365F, enough for a tortilla to brown in about 1 minute.

MAKING

4) Over clean work area, place a tortilla, apply sesame oil, over it using a brush. 5) Brush with egg.

6) Season the tortilla lightly with salt.

7) Sprinkle with 2 to 3 tablespoons of the scallions over it.

8) Arrange a second tortilla over the first one and press them firmly together.

9) Carefully slide the prepared tortillas into the hot oil cook until brown on one side.

10) Using a pair of tongs or chopsticks to turn the tortillas to brown on the other side.

11) Till the tortillas are browned evenly on both side, prepare the next onion cake.

FINALIZING

12) Using tong remove the cake and hold it vertically over the oil to drain.

13) Leave it on a paper towel to drain completely.

14) Place the onion cake on a cutting board cut it into sixths, using a sharp kitchen knife.

15) Do the same for all onion cakes are cooked.

SERVING

16) Serve the Hunan Onion Cakes hot with a small mixed salad with a desired dip.
