Wonton skins 35 (1 Packet)
Chicken stock 2 Pint (1.1 Liter)
For filling
Minced pork 12 Ounce (350 Grams)
Light soy sauce 1 Tablespoon
Dry sherry/Rice wine 2 Teaspoon
Spring onions 1 1/2 Tablespoon , finely chopped
Sesame oil 1 Teaspoon
Egg white 1
Cornflour 1/2 Teaspoon
Sugar 1 Teaspoon
Salt 1/2 Teaspoon
For garnish
Spring onions 1 Tablespoon , finely chopped

1. In a large bowl, place all the filling ingredients and mix well. Combine them well till all the ingredients are mixed well.

2. Prepare the wonton skins by placing a little of the filling gin the center of each wonton skin. Bring the sides of the skin around the filling and pinch them together at the top. This will seal the sides of the wonton and prepare a round dumpling from it.

3. In a large pot, place the water and bring to the boil. Tip all the prepared wuntuns in the water and cook for 1 minute or more until they float to the top. This poaching procedure will remove any extra flour on the wuntun and ensure that it remain soft.

4. Use a slotted spoon to remove the wuntun and place them on a plate.

5. In a large pot, pour in the chicken stock and bring to the boil. Put in the poached wuntun and the garnish ingredients and simmer on low heat for 2 minutes.

6. Serve hot immediately
