Potato Chop Suey

Ingredients

Potatoes 2 Medium (in jackets)
Onion/Scallion 1 , cut fine
Green pepper 1 , chopped (with seeds)
Celery stalks 2 , chopped with leaves
Eggs 2
Oregano 1 Dash
Olive oil/Corn oil / peanut oil 2 Tablespoon
Sea salt To Taste (as desired)
Paprika To Taste (as desired)

Directions

GETTING READY

1) Cut potatoes in 1-inch slice.

MAKING

2) In a pan smear oil and add potatoes to it.

3) Heat the slices from top.

4) Dice the potatoes again. Cover and keep in pan away from heat.

5) In another pan heat onion, pepper and celery with seasoning.

6) The vegetables should just be heated but not cooked.

7) In a serving bowl, mix vegetables with the potatoes.

8) Add beaten eggs to it.

SERVING

9) Serve immediately.
