Cornish hens 4 (4
Fresh ground pepper 4 Teaspoon
Kosher salt 8 Teaspoon
Celery ribs 2 , cut in large pieces
Oranges 2 , peeled and segmented
For cranberry compote
Cranberries 12 Ounce
Granulated sugar 3/4 Cup (12 tbs) , divided
Apricot preserves 4 Ounce
Water 1/4 Cup (4 tbs)



1. Preheat the oven to 375 degrees.


2. In a sauce pot, add the cranberries, apricot jam and cup of sugar, initially and later add in the remaining sugar. Cook together until it turns into a sauce, on low heat for about 20-30 minutes.

3. Pat dries the hens with a paper towel. Season each hen, inside the cavity and outside with 2 teaspoons of salt and about 1 teaspoon of pepper.

4. Stuff each hen with orange slices and celery.

5. Take the cranberry sauce and generously brush them on each bird, reserving some for basting.

6. Place in the oven and roast for about 20-30 minutes. Take the birds out and brush them again with the remainder of the cranberry sauce. Finish roasting the oven for about another 15-20 minutes, until the internal temperature reaches 165 degrees.

7. Let rest for about 5-10 minutes before serving.


8. Slice the chicken and serve with green salad.
