Asparagus Stuffed Chicken Breast - Baked With Mozzarella Cheese And Onion by Rockin Robin

This asparagus stuffed chicken breast recipe is moist and delicious.


Chicken breast 4 , pounded to 1/4 inch thick
Salt and pepper To Taste
Mozzarella cheese 1 1/4 Cup (20 tbs) , shredded and divided
Garlic powder 1 Teaspoon
Asparagus stalks 16 , cleans and trimmed
Fresh basil leaves 5 , torn into pieces
Almond flour 3/4 Cup (12 tbs)
Pam spray 2 Dash
Olive oil 2 Teaspoon (For greasing)
For yogurt sauce
Greek yogurt 1/2 Cup (8 tbs)
Zest of lemon 2
Green onion 2 , sliced



1. Preheat the oven to 375 degrees F. Grease a baking dish with pam spray and set aside.


2. Season the chicken with salt, pepper, and garlic powder.

3. In a medium bowl, combine yogurt and lemon zest, set aside.

4. Layer cheese, asparagus, onion, and basil in the center of chicken breast and roll up and seal closed with a toothpick.

5. Dip the chicken roll in yogurt. Use your finger to spread yogurt around. Then roll in almond flour.

6. Place the chicken in a baking dish and brush olive oil over the asparagus. Sprinkle some cheese over the chicken.

7. Cover the dish with an aluminum foil and bake for 10 minutes. After 10 minutes, remove the foil and bake an additional 30 minutes or until the chicken is no longer pink inside.


8. Serve chicken with some salad.
