Episode 14: Chicken in Tomato and Onion Sauce

Johanna Cook makes another chicken dinner using chicken thighs with a fresh tomato sauce.


Bone in chicken breasts 4
Yellow bell pepper 1 , sliced
Spanish onion 1 Small , sliced
Garlic 2 Clove (10 gm) , minced
Roma tomatoes 5 , diced (or 1 can of diced tomato)
Low sodium chicken stock 1/3 Cup (5.33 tbs)
Olive oil 3 Tablespoon
Italian seasoning 1/2 Tablespoon
Kosher salt To Taste
Pepper To Taste



1. Season the skin side of the chicken breast with salt and pepper.

2. Heat a skillet on medium high heat and put olive oil. Place the seasoned chicken skin- side down and season the other side with salt, pepper and seasoning.

3. Once brown on one side (about 15 minutes) flip the chicken and continue to cook till the chicken browns on both the sides. Sprinkle the Italian seasonings in it.

4. Add the onions, garlic and tomatoes and scrape the bottom of the pan and stir it well.

5. Add the bell pepper and pour the chicken stock. Stir to mix. Reduce the heat to medium low and simmer for around 15 minutes or till the chicken is fully done. Turn off the heat.


6. In a serving plate, serve the chicken with rice or bread.


Once the cooking is complete, the skin from the chicken can be peeled off and discarded.
