Bacon Wrapped Chicken with Tomato Basil Sauce

Italy, the Italian Riviera to be exact is the inspiration for Bacon Wrapped Chicken with tomatoes Basil.


Boneless skinless chicken thigh 6
Bacon slices 6
Garlic 1 Clove (5 gm) , finely sliced
Tomatoes 1 1/2 Pound ((or 1 28 ounce can chopped tomatoes))
Basil 4 Tablespoon
Salt and pepper To Taste
Olive oil 5 Tablespoon ((4



1. Blanch tomatoes in boiling water for 45 seconds. Drop into ice bath and allow them to cool.

2. Remove the peel, seed and chop tomatoes as shown in the video.

3. Place one garlic slice into the center of each chicken and roll it with bacon.

4. Preheat oven to 400 degree F.


5. Place a non stick pan over medium heat and cook chopped tomatoes in it until softened and the juice is reduced by half.

6. Throw basil and give it a good mix. Remove the pan from heat.

7. Into a baking dish, pour the tomato mixture. Season with salt and pepper.

8. Snuggle the chicken into the sauce and drizzle olive oil on top.

9. Place the baking dish in oven and bake for 55-60 minutes.


10. Serve chicken hot with salad.
