These quesadillas couldn't be easier to make. Your kids will love the way these quesadillas taste and we begging for more!

Chicken breast 1/2 Cup (8 tbs)
Pinto beans 3/4 Cup (12 tbs)
Monterrey jack cheese 1 Cup (16 tbs)
Whole wheat tortillas 4 Large

1. In a steamer pot, place the chicken breast and put the pot over boiling water to steam for 8 minutes or until it’s done.

2. Make several pieces from the steamed chicken and put into a food processor, along with the beans. Pulse until well combined and little pieces remain.

3. Take half of a tortilla to spread 3 tablespoon of the chicken mixture. Cover with 1/4 cup shredded cheese.

4. Fold the tortilla in half.

5. In a saute pan, place the tortilla over low to medium heat (there’s no need to add oil, butter or spray). Cook for 2-3 minutes, flip on the other side and continue to cook another 2-3 minutes or until the cheese is melted.

6. Cool for several minutes and then cut into 5 triangles.

7. Serve it hot with your favorite dip or salsa.

-The cheese can remain quite hot even after you cut the tortillas into triangles, so make sure it’s cool before serving to your toddler.
