Chicken Tomato Bean Bake

Ingredients

Stewed tomatoes 14 Ounce
White cannellini beans 19 Ounce , drained, rinsed
Garlic 4 Clove (20 gm) , mince
Fresh oregano 15 Gram (5 sprigs)
Sea salt To Taste
Ground black pepper To Taste
Bone in skin on chicken thigh 300 Gram (4)
Fennel seeds 1 Teaspoon
Sea salt flakes 1 Teaspoon
Olive oil 4 Teaspoon

Directions

GETTING READY

1. Preheat oven to 400 degree F.

MAKING

2. In a baking dish, add tomatoes, beans, garlic, and oregano.

3. Sprinkle salt and pepper.

4. Place chicken, skin side up in baking dish.

5. In a mortar and pestle, grind fennel and sea salt flakes.

6. Sprinkle fennel seed mixture on chicken. Drizzle with olive oil.

7. Pop it in oven, and bake for 30-35 minutes or until chicken is golden and cooked through.

SERVING

8. Serve chicken tomato bean bake hot.
