Fried Chicken with Hot Cranberry Sauce

Broilers 2 1/2 Pound
Kosher salt 2 1/2 Teaspoon
Pepper 1/4 Teaspoon
Flour 1 1/2 Cup (24 tbs) , sifted
Baking powder 1 1/2 Teaspoon
Egg 1
Water 1/2 Cup (8 tbs)
Fat 2 Cup (32 tbs) (For Deep Frying)
Canned whole cranberries 1 Cup (16 tbs)
Apple sauce 1/2 Cup (8 tbs)



1) Using a sharp knife, get the chicken cut up to pieces


2) Sprinkle in 2 teaspoons of salt, pepper and 3 tablespoons of flour to season the chicken

3) In a bowl sift the remaining flour with salt and baking powder

4) Add in the in the egg and water and beat well to form a smooth batter

5) Coat the chicken pieces into the batter to coat well

6) In a skillet, pour the fat and heat to 370 F

7) Fry in small batched and place them onto absorbent kitchen paper

8) Place the chicken pieces into a baking pan

9) Bake in the oven for 30 minutes at 250 F with the lid

10) Take off the lid in the last 10 minutes

11) Into a saucepan, mix together the applesauce and cranberries and heat over a low flame


12) Serve the chicken with the cranberry and apple sauce spooned over
