Fried Chicken with Lemon Rice

Chicken joints 4
Oil 2 Cup (32 tbs) (As Required For Frying)
Water 1 Pint
Long grain rice 8 Ounce
Salt To Taste
Lemon 1 , grated and sliced
Butter 2 Ounce
Lemon 1 , quartered (For Garnish)



1) In a skillet, sear the chicken joints in oil for about 10 to 15 minutes, turning occasionally, until lightly browned.

2) Cover and cook over a low heat for another 15 minutes, or until chicken is tender.

3) Uncover and cook during the last 5 minutes of cooking.

4) Meanwhile, in a pan, bring water to a boil.

5) Add the rice, salt and lemon slices.

6) Return to boil, stir once, then cover and cook over a low heat for about 10 minutes until tender.

7) Remove the lemon, stir in butter and 1 teaspoon finely grated lemon rind.

8) Transfer the rice to a serving dish and top with the chicken joints.


9) Garnish with lemon quarters and serve the Fried Chicken with Lemon Rice with fresh salad.
