Skillet Chicken Medley

Milk 1/4 Cup (4 tbs)
Ground nutmeg 1/4 Teaspoon
Black pepper 1/4 Teaspoon
Garlic 1 Clove (5 gm) , finely chopped
Skinless boned chicken breasts 24 Ounce , split lengthwise in half (4, 6 Ounce Each)
Mozzarella cheese 4 Ounce , cut into 8 logs
Red wine vinegar/Cider vinegar 3 Tablespoon
Sugar 1 Tablespoon
Soy sauce 1 Tablespoon
Water 1 Tablespoon
Red skinned potatoes
Romaine lettuce 8 Large
Yellow squash/Zucchini 1 Pound , cut diagonally into 3/4 inch thick slices (2 Medium)
Olive oil 1/4 Cup (4 tbs)



1) Take a bowl and combine milk, nutmeg, garlic and black pepper in it.

2) Add chicken to the mixture and toss to coat evenly. Set aside.

3) Take a small bowl and place mozzarella cheese in it. Pour vinegar over it and set aside.

4) Take a cup and stir together soy sauce, sugar and water in it. Set aside.

5) Boil potatoes until tender. Drain and cute them in half. Cover with aluminum foil to keep warm.

6) Take a medium size pot and boil water in it. Dip the romaine leaves, one by one, in the water to soften. Diagonally slice off the thick part of the central vein. Place 1 log of cheese at the wide end of each leaf and roll up, folding around the ends to form a parcel.

7) Take a jelly roll pan or baking dish and grease it with oil on all sides. Place potatoes, romaine parcels in it.

8) Drain chicken and divide food into batches.

9) Take a 9-10 inch cast iron skillet and heat it for about 5 minutes. When it is hot enough that drops of water begin sizzling upon coming in contact with the skillet surface, char all ingredients until black on one side by placing in a single layer. Turn to char on the other side.

10) Cook food in the following order: squash for about 7 minutes, romaine parcels for about 3 minutes, potatoes for about 6 minutes and chicken for about 10 minutes. Keep placing all the items, on by one, on a hot serving platter.

11) In the end brush with soy sauce mixture.


12) Garnish with onion brushes, if desired.
