Chicken a La Blue

Blue cheese 4 Ounce , crumbled (1 Package, Treasure Cave Brand)
Chicken breasts 3 Large , skinned, boned and halved lengthwise
Finely chopped onion 2 Tablespoon
Butter stick/Margarine 1/2 (1/4 Cup)
Frozen chopped spinach 10 Ounce , thawed and drained (1 Package)
Fine cracker crumbs 1 Cup (16 tbs)
Lemon juice 1 Tablespoon



1. Place each chicken breast between 2 sheets of waxed paper. Pound the chicken with a meat hammer or use the bottom of saucepan to flatten the chicken to 1/4-inch thickness.


2. In a skillet, melt the butter.

3. Saute the onion in half the butter until it is soft and golden.

4. Add the chopped spinach to the onion and saute it quickly until it wilts. Allow the moisture to evaporate.

5. Add the cracker crumbs and sprinkle lemon juice. Toss to mix thoroughly.

6. Take the pan off the heat and allow the mixture to cool slightly.

7. On each flattened chicken breast, spoon ¼ cup of the spinach mixture.

8. Fold the sides neatly and roll the chicken breast. Tie or skewer the roll to secure.

9. In a frying pan, melt the remaining butter.

10. Cook the chicken rolls in the butter until they are evenly browned and tender.


11. Serve the chicken with mashed potatoes on the side.
