Kiwi Strawberry Chicken

Ingredients

California strawberries 2 Cup (32 tbs) , halved
Kiwifruit 1 , peeled, sliced
Cubed cantaloupe 2 Cup (32 tbs)
Chopped fresh tarragon 2 Teaspoon
Olive oil 1/4 Cup (4 tbs)
Chopped shallots 1/4 Cup (4 tbs)
Raspberry vinegar 1/4 Cup (4 tbs)
Ground black pepper 1/2 Teaspoon
Chicken breasts 8 , halved

Directions

MAKING

1) In a medium-sized bowl add in the strawberries, kiwis, cantaloupe and fresh tarragon. Mix well.

2) Cover and refrigerate the bowl for 2 hours.

3) In a saucepan, heat oil. Add in the shallots and saute till they become soft.

4) Add in the vinegar and pepper.

5) Let the mixture come to a boil.

6) Drizzle the hot dressing over the chilled fruits. Stir well.

7) Grill the chicken breasts.

SERVING

8) Add the warm fruit compote over the hot chicken breasts.
