Lime juice 1 Tablespoon
Adobo seasoning/Taco seasoning 1 Tablespoon
Olive oil 1 Teaspoon
Small potatoes 1 Pound (Peeled)
Onions 3/4 Pound , peeled and sliced
Sodium chicken broth 1/3 Cup (5.33 tbs)
Bay leaf 1
Frozen green peas 1 Cup (16 tbs) (1 Package)


To Microwave: In 3-quart microwave-safe dish, stir lime juice, adobo seasoning and olive oil until blended.

Coat cliicken with lime mixture and arrange in circle on bottom of dish.

Arrange potatoes and onions on top; add broth and bay leaf.

Cover with vented plastic wrap; microwave at HIGH (100% power) 3 minutes.

Reduce power to MEDIUM-HIGH (70% power); microwave 8 minutes, stirring twice.

Add peas; cover and microwave at MEDIUM-HIGH 8 minutes longer or until chicken is cooked through.

Remove and discard bay leaf.

Let stand, covered, 15 minutes before serving.
