Grilled Chicken with Peanut Sauce is SO easy to make, has tons of flavor, and makes for a great weeknight dinner. The marinade recipe is very simple, and so is the peanut sauce!
For the chicken thighs | ||
Soy sauce | 2 Tablespoon | |

For the peanut sauce | ||
Lime juice | 2 Tablespoon | |
Creamy peanut butter | 1/2 Cup (8 tbs) | |
Ground cumin | 1/2 Teaspoon | |
Coconut milk | 1 Cup (16 tbs) | |
Ground coriander | 1/2 Teaspoon | |
Brown sugar | 2 Tablespoon | |
Skinless chicken thighs | 1 1/2 Pound (boneless) | |
Soy sauce | 2 Tablespoon |
Making
In a large bowl, whisk to combine the soy sauce, garlic, honey, lime juice, cumin, and coriander. Place the chicken into the marinade, and let it sit in the fridge for 2 hours.
Preheat your grill to high, and take the chicken out of the marinade. Grill for about 3 minutes on each side, until cooked through.
To make the peanut sauce, combine all ingredients in a saucepan and bring to a simmer over medium heat. Simmer for 5 minutes until thickened and smooth. Serve with the chicken. Enjoy!
