Peri Peri or Piri Piri is a killer blend of spices that result is the most delicious flavour. In this recipe I roasted a whole chicken, but you could also use this to BBQ pieces of chicken or wings. Red Chillies are ground and mixed together with spices, vinegar, lemon juice and fresh thyme.

Coarse salt | 1 Teaspoon | |
Garlic powder | 1 Teaspoon | |
Garlic | 4 Clove (20 gm) , crushed | |
Paprika | 1 Teaspoon | |
Thyme leaves | 2 Teaspoon | |
Red wine vinegar | 1/4 Cup (4 tbs) | |
Olive oil | 1/4 Cup (4 tbs) | |
Lemon juice | 1 Tablespoon ((from 1/2 lemon)) | |
Black pepper | 1/2 Teaspoon | |
For brine: | ||
Salt | 1/4 Cup (4 tbs) | |
Sugar | 1/4 Cup (4 tbs) | |
Water | 1 Liter |
GETTING READY:
In a large bowl combine sugar, salt, water and mix well to prepare brine.
Soak chicken overnight, remove and pat dry using paper towel.
Preheat oven to 350°F.
MAKING:
In a bowl, combine onion powder, garlic powder, smoked paprika, garlic, red wine vinegar, crushed chiles, black pepper, salt, thyme and mix well.
Rub the mixture over chicken and allow to marinate for 2 hours.
Grease baking tray with oil and place chicken over it.
Pop into oven and roast for 60-80 minutes or until golden brown.
