On this cook I get to fire it up with the most awesome DJ BBQ. DJ BBQ traveled all the way from London to tour all the good eats in California. I show DJ BBQ how I prepare a Chipotle Cherry Chicken Lollipop on Weber grill

Also want to give a big shout out to Greg at Ballistic BBQ for helping shoot this cook. Thank you.

Chicken drumsticks 6
Rub 3 Tablespoon
For the sauce
Cherry preserve 1 1/2 Cup (24 tbs)
Chipotle pepper 1
Adobo sauce 1 Tablespoon
Soy sauce 1 Tablespoon
Worcestershire sauce 1 Tablespoon
Apple cider vinegar 2 Tablespoon
Liquid smoke flavoring 1 Teaspoon
Granulated onion 1 Teaspoon
Cocoa powder 1 Teaspoon

Preheat the BBQ grill.

Cut off one bone from the chicken drumsticks and collect all the flesh at one end as shown in the video.

Generously Season the drumsticks with rub and set aside.

For the sauce – In a saucepan, add in all the ingredients one by one and simmer on low heat while adding.

Place the chicken over the barbecue and cover. Cook for 45 – 60 minutes.

After an hour, dip the cooked chicken into the sauce and place on the barbecue again for 10 – 15 minutes.

Serve the chicken lollipops with some beer.
