Grandma Barb's Roasted Pepper Chicken

Well-seasoned chicken roasted with red and green bell peppers, onions and celery! It doesn't get any easier than this for a quick, flavorful dinner! My grandmother Barb makes so many delicious chicken recipes but this one has quickly become one of my favorites for it's ease of preparation. I love that it uses fresh ingredients and you can throw everything in the pan and put it in the oven!

Ingredients

Chicken 5 Pound , cut up
Olive oil 1 Tablespoon ((1/2
For spice mixture
Seasoning salt/Plain salt 1 Teaspoon ((or to taste))
Black pepper 1 Teaspoon
Cajun seasoning 1 Teaspoon
Paprika 1 Teaspoon
Italian seasoning 1 Teaspoon
Oregano 1 Teaspoon
Onion powder 1 Teaspoon
Garlic powder 1 Teaspoon
Brown sugar 1 Teaspoon , packed
Poultry seasoning 1 Teaspoon (Optional)
Other ingredient
Green bell pepper 1 , sliced
Red bell pepper 2 , sliced
Celery stalk 4 , cut up
Red onion 1/2 , sliced
Melted butter 1 Tablespoon ((as needed))
