Here is my recipe in my Tequila Chicken showdown with Greg from Ballistic BBQ! All in good fun, and I hope you enjoy both of our videos!

For marinade | ||
Chopped garlic | 2 Teaspoon | |
Chopped oregano | 2 Teaspoon | |
Lime juice | 4 Tablespoon | |
Chipotle in adobo sauce | 3 , chopped | |
Orange juice | 1 Cup (16 tbs) | |
Tequila | 1/2 Cup (8 tbs) | |
Adobo sauce | 2 Tablespoon | |
Salt | 1 Teaspoon | |
Freshly ground black pepper | 1/2 Teaspoon |
GETTING READY
1. Mix lime juice, orange juice, tequila, garlic, oregano and the chipotle peppers and adobo sauce together to prepare the marinade. Season with salt and pepper.
2. Place the chicken in a ziploc bag and pour the marinade over it. Seal the bag. toss it and place it in the refrigerator for about 4 to 6 hours.
3. Prepare the grill by heating lump charcoal. Place pimiento chips over the charcoal and get the set up ready. Bring up the temperature to 350 F.
MAKING
4. Remove the chicken from the marinade and place it on an aluminium pan. Liberally coat the chicken with the chupacabra rub.
5. Pour the remaining marinade in the chicken sitter, also place a few pimiento leaves in it. Place the chicken over the sitter and keep everything on the grill.
6. Grill for about an hour and 20 minutes.
SERVING
7. Remove the chicken from the grill. Carve the meat and serve it with the juices that collect at the bottom of the pan and in the sitter.
