Pitted Dark Cherries Jubilee

Ingredients

Canned pitted dark cherries 1 Can (10 oz) (1 Large Can)
Dark cherries 1 1/2 Can (15 oz) , pitted (Large Can)
Sugar 2 Tablespoon
Cinnamon stick 1
Orange 1/2 , grated and juiced
Cornstarch 1 Teaspoon
Cognac 4 Tablespoon
Cherry brandy 4 Tablespoon
Vanilla ice cream 1 Cup (16 tbs) (To Serve)

Directions

GETTING READY

1. Drain syrup from cherries into a measuring jar and reserve 1 1/3 cups.

2. Scoop ice cream into bowls and freeze until ready to serve.

MAKING

3. In a heavy saucepan or flame pan, combine sugar, cinnamon, orange juice and rind, and reserved cherry syrup.

4. Blend in cornstarch, stirring until smooth.

5. Place pan on a low flame and heat the sauce, stirring, until it is thick and bubbly about 5-7 minutes.

6. When the sauce is reduced to a syrup stir in the cherries and heat through

7. To flambé the cherries, pull the pan off the heat and add the brandy.

8. Ignite the alcohol with a long match or one held with tongs.

9. Swirl the pan slightly until the flames subside, about 30 seconds

SERVING

10. Ladle the cherries and the syrup over prepared ice cream scoops in dessert bowls.

11. Serve immediately.
