Avocado Cheesecake with a Raspberry Margarita topping

This is a cheesecake that I entered in The Real Women of Philadelphia's annual cheesecake contest. It might sound odd but trust me it's really good.


Cream cheese 24 Ounce , softened (Philadelphia Cream Cheese)
Avocados 1 1/2
Sugar 1 Cup (16 tbs)
Flour 2 Tablespoon
Sea salt 1/4 Teaspoon
Eggs 2
Egg yolk 1
Lime juice 1 1/2 Teaspoon
Vanilla extract 1/4 Teaspoon
Half and half 1/4 Cup (4 tbs)
For the crust
Flour 3/4 Cup (12 tbs)
Sugar 3 Tablespoon
Lime juice 1 Teaspoon
Softened butter 6 Tablespoon
For the raspberry margarita topping
Raspberries 12 Ounce
Sugar 1/2 Cup (8 tbs)
Fresh lime juice 1/4 Cup (4 tbs)
Tequila 2 Tablespoon
Triple sec 3 Tablespoon



1. Preheat the oven to 400 degrees F.


2. In the bowl of electric mixer, add in the cream cheese, avocados, sugar, flour, sea salt, eggs, egg yolk, lime juice, vanilla extract and half and half. Blend well until smooth and creamy. Place the mixture into the refrigerator.

3. For the crust – in a medium bowl, add in all the ingredients and mix well with a pastry cutter.

4. Remove the bottom of the spring form pan and divide the crust mixture in half. Make bottom crust by pressing the mixture on the spring pan bottom.

5. Bake in the oven for 8 minutes. Remove the crust and increase the temperature to 450 degrees F.

6. Cool the crust over a cooling rack.

7. Attach the top of the pan and make side crust with the remaining crust mixture. Pour the avocado mixture over the crust.

8. Bake in oven for 10 minutes then reduce the temperature to 300 degrees F and bake for another 60 minutes.

9. Meanwhile prepare the raspberry margarita and for that in a large bowl, take all the ingredients and mix thoroughly. Cover with a saran wrap and place in fridge.

10. Take out the cheesecake and let it cool over a cooling rack. Place in the refrigerator before serving.


11. Slice the cake and top with raspberry margarita. Serve the dessert and enjoy!
