Lynn's Oreo Cheesecake Like Mick's Restaurant

Lynn demonstrates how to make an Oreo Cheesecake like they served at Mick's Restaurant. This makes a huge cheesecake that would be suitable for a crowd for dessert.

Ingredients

Cooking spray 2 Dash
For the crust
Melted butter 4 Tablespoon
Oreo cookies 2 Cup (32 tbs) , crushed fine (about 18
For the filling
Cream cheese 3 Pound , softened
Pure vanilla extract 2 Teaspoon
Granulated sugar 2 Cup (32 tbs)
Eggs 5
Oreo cookies 2 Cup (32 tbs) , chunked
For garnish
Whipped cream 12 Ounce
Oreo cookies 1 Cup (16 tbs) (12 cookies)

Directions

GETTING READY

1. Preheat the oven to 250. Cover the bottom of a 10" spring form pan with heavy duty aluminum foil, spray with cooking spray and set aside.

MAKING

1. To make the crust – In a large bowl, stir together the melted butter and Oreo crumbs.

2. Place in the pan and press down firmly and evenly with hands.

3. Bake for 8-10 minutes. Remove from the oven and set aside to cool.

4. To make the filling – in a mixing bowl, place the cream cheese and mix on medium speed until soft. Use a rubber spatula to scrape the bowl often to ensure even distribution.

5. Add the sugar and beat well, scraping bowl, until mixture is smooth.

6. Reduce the mixing speed to low, and gradually add in the eggs one at a time and mix well.

7. Add in the vanilla extract and incorporate the entire ingredient well.

8. Stir in the Oreo chunks into the batter and mix with a wooden spatula.

9. Pour the batter into the prepared pan and place the cheesecake pan into a large roasting pan.

10. Fill the roasting pan with boiling water, leaving 1" of space from the top of the cheesecake pan.

11. Bake in the preheated oven for 2 1/2-3 hours, until the top of the cheesecake is lightly golden.

12. Remove from the oven and let set until completely cool. Refrigerate for 24 hours.

FINALIZING

13. To make the garnish, top each slice of cheesecake with 1 ounce of real whipped cream and an Oreo cookie.

SERVING

14. Serve Oreo Cheesecake for dessert.
