Blueberry Cheesecake

For crust
Graham crackers 16 , crushed
Sugar 1 Cup (16 tbs)
Margarine 1 Cup (16 tbs)
For filling
Cream cheese 8 Ounce (package)
Eggs 2 Medium , beaten
Vanilla 1 Teaspoon
Blueberries 1 Can (10 oz)



1. Preheat the oven to 350 F.

For crust

2. In a bowl, place together cracker crumb, sugar and margarine, and rub well with hands until sandy in texture.


3. In a 9” baking pan, put the crust mixture and press in base and sides.

For filling

4. In a bowl cream together cheese, eggs, vanilla and sugar until well combined.

5. Transfer the cheese mixture into the crust and bake for 15 minutes, or until the filling sets.


6. Remove the baking pan from oven and allow to cool.

7. Arrange the blueberries on top and cut in wedges.


8. Serve with a dollop of whipped cream or ice cream if desired.
