Gingerbread Cheesecake

Cool creamy cheesecake...mmm! With a touch of spice from the ginger cookie crust, this easy-to-make, luscious cheesecake is sure to wow family friends.


For crust
Moravian spice cookies/Molasses thin wafer cookies 50 , crushed
Butter 1/2 Cup (8 tbs) , melted
For cheesecake
Eggs 3 Medium , beaten
Sugar 3/4 Cup (12 tbs)
Cream cheese 8 Ounce , softened
Orange zest 1 Tablespoon
Orange juice 2 Tablespoon
For glaze
Sour cream 1 Cup (16 tbs)
Powdered sugar 1/2 Cup (8 tbs)



1. Preheat the oven to 350°F.

2. Crush the cookies into fine crumbs and place in a bowl, set aside 3 cookies for garnish.

3. Add melted butter to the crumbs and mix well.

4. Break the reserved cookies into half and set aside.


5. In a greased 8” spring foam pan, press the crumb mixture and bake in the oven for 10 minutes.

6. In a large bowl, put together egg and sugar and beat until well mixed.

7. Add cream cheese, orange zest, and orange juice and whisk well.

8. Pour the egg mixture over the baked crust and bake for 30 minutes.

9. Remove from the oven and allow to cool completely.


10. In a bowl, mix sour cream and powdered sugar and whisk until combined.

11. Spread the sour cream mixture over the cheesecake.


12. Garnish the cheesecake with cookie halves and with orange peel if desired.

13. Cut cheesecake in wedges and serve.
