Wilcox Family Farms Eggnog Cheesecake

Ingredients

Graham cracker crumbs 2 1/2 Cup (40 tbs)
Sugar 1 1/2 Cup (24 tbs)
Butter 2/3 Cup (10.67 tbs) , melted
Eggs 4 (Wilcox)
Salt 1/8 Teaspoon
Lemon juice 1 1/2 Tablespoon
Lemon rind 1 1/2 Teaspoon , grated
Eggnog 1 Cup (16 tbs) (Wilcox)
Cottage cheese 1 1/2 Pound (Wilcox)
Flour 4 Tablespoon
Walnuts 1/4 Cup (4 tbs) , chopped

Directions

GETTING READY

1. Preheat oven to 350°F.

MAKING

2. In a bowl combine graham cracker crumbs, 1/2 cup sugar and melted butter.

3. Reserve 3/4 cup of mixture and press the remaining amount into a 9-inch springform pan.

4. In another bowl beat eggs with the remaining sugar until light.

5. Add salt, lemon juice, rind, eggnog, cottage cheese and flour and beat thoroughly and strain through a sieve.

6. Pour into graham cracker crust and sprinkle with remaining crumbs and nuts.

7. Bake about 1 hour (until center is firm), turn off heat, open oven door and let stand in oven until cool.

SERVING

8. Cut the cheesecake into wedges and serve.
