Ingredients

White bread slice 6
Skim milk 6 Tablespoon
Vanilla 3 Teaspoon
Artificial sweetener 1 1/2 Cup (24 tbs)
Unflavored gelatin 2 Ounce (2 Envelopes)
Water 1 Cup (16 tbs)
Eggs 4 Large , separated
Salt 1/4 Teaspoon
Grated lemon rind 1 Teaspoon
Grated orange rind 1 Teaspoon
Grated lime rind 1 Teaspoon
Lemon juice 1 Tablespoon
Almond extract 1/2 Teaspoon
Cottage cheese 3 Cup (48 tbs)
Cream of tartar 1/2 Teaspoon
Butter 1 Tablespoon

Directions

GETTING READY

1) Preheat the oven to 350°F.

2) Coat the bottom of 8 inch spring- form pan with butter.

3) In a bowl, lightly beat the egg yolk.

4) In a food processor, place the toast and process until coarse crumbs are formed.

5) In a mixing bowl, mix together crumbs, milk, 1 1/2 teaspoons of vanilla, 1/4 cup of sweetener.

6) Press 2/3 of the crumbs mixture in bottom of the form pan.

7) Place the pan in oven and bake for 10 minutes.

8) Allow the crumb mixture to cool down.

MAKING

9) In a top bowl of a double boiler, soak gelatine in water.

10) Stir the egg yolk in the gelatine mixture, until well blended.

11) Stir the gelatine mixture until it completely melts.

12) Remove the gelatine mixture from heat.

13) Add the remaining sweetener, salt, rinds, lemon juice, 1 ½ teaspoon of vanilla and almond extract, to the gelatine mixture and mix well.

14) In an electric mixer, beat the cottage cheese at full speed until smooth.

15) Fold the cottage cheese in the gelatine mixture.

16) Place the cheese mixture in the refrigerator until chill, stirring occasionally until the mixture is firm.

FINALIZING

17) In a bowl, beat the egg white and cream of tartar until stiff.

18) Blend the egg white mixture lightly with cheese mixture.

19) Drop the cheese mixture over the crumb crust.

20) Place the pan into refrigerator for 2 hours or until set.

21) When ready to serve, remove the set mixture from the pan.

22) Cut into 6 wedges.

SERVING

23) Serve cold, sprinkled with icing sugar if desired.
