Marble Cheesecake

Crushed vanilla wafers 2 1/2 Cup (40 tbs)
Butter/Margarine 1/2 Cup (8 tbs) , melted
Sugar 1/2 Cup (8 tbs)
Unflavored gelatin 1/4 Ounce (1 Envelope)
Milk 1 Cup (16 tbs)
Cream cheese 8 Ounce , softened (1 Package)
Vanilla 1/2 Teaspoon
Evaporated milk 14 Ounce , chilled ice cold (1 Can)
Unsweetened cocoa powder 1/4 Cup (4 tbs)



1) Combine together the vanilla wafer crumbs and the melted butter.

2) On to the bottom and up the sides of a 9-inch spring-form pan, press the mixture. Alternatively, use a 13x9x2-inch baking pan.

3) Chill the mixture.

4) In a saucepan, combine together ½ cup of sugar and gelatin.

5) Add 1 cup of milk and stir well.

6) Heat the mixture and stir well till the gelatin and sugar have dissolved.

7) Cool till the mixture starts to thicken.

8) In the meantime, beat together the softened cream cheese, vanilla and ½ cup of sugar. Add the thickened gelatin mixture and blend well.

9) Whip the chilled evaporated milk till it forms stiff peaks and then fold it into the cheese mixture.

10) In a small bowl, place 1/3rd of the mixture and gently fold in the cocoa.

11) Spoon the vanilla and chocolate mixture alternately into the chilled crust and swirl.

12) Chill for a minimum of 8 hours, or overnight.


13) Serve the cheesecake chilled as a dessert. Also makes a good tea/coffee accompaniment.
