Potato Cheese Cakes

Potatoes 8 Ounce (225 Gram)
Eggs 2 , separated
Grated cheese 6 Ounce (175 Gram)
Onion 1 Medium , grated
Parsley 1 Tablespoon , chopped
Kelp powder 1 Teaspoon
Sunflower seed 1 Tablespoon (For Frying)



1. Preheat the oven to 375°F/190°C.

2. Grease a baking tray with oil or butter.


3. Wash and cut the potatoes into quarters without peeling the skin.

4. In a saucepan, cover the potatoes with water and boil them until tender.

5. Drain the potatoes and cool slightly until easy to handle and then peel them and put in large mixing bowl.

6. In the mixing bowl, mash the potatoes using a masher or the back of a spoon

7. To the mashed potaoes, add the egg yolks, cheese, onion and parsley and kelp powder. Mix well until ingredients are blended.

8. In a separate clean and grease free glass bowl, beat the egg whites until they are firm and form soft peaks.

9. Fold the egg whites into the potato mixture using a spatula.

10. Drop tablespoons of the mixture in mounds on the greased baking sheet, keeping a space of 1 inch between each.


11. Place the baking sheet in the preheated oven without delay and bake the potato cakes for 15 minutes till they are fluffy and golden brown


12. Remove the cakes from the oven and arrange on a platter and serve immediately with sauces of your choice.
