No Bake Tim Tam Cheesecake

Tim Tam Cheesecake is a decadent celebration of Australias favourite chocolate biscuit: the Tim Tam. Tim Tams are chopped and crushed, made into the base, folded through the cheesecake layer and lovingly scattered on top of the cheesecake surface. You cant stop at one slice, and this sensational dessert will have the whole family begging for more - give it a go!

Ingredients

Cream cheese 375 Gram (at room temperature)
Castor sugar 1/2 Cup (8 tbs) (super fine white sugar)
Vanilla extract 1 Teaspoon
Whipping cream 1 Cup (16 tbs)
Gelatin powder 3 Teaspoon
Boiling water 1/4 Cup (4 tbs)
White chocolate 200 Gram , melted, cooled
Chocolate biscuits 100 Gram , 6 biscuits roughly chopped (Arnott’s Tim Tam, plus little extra for topping)

Directions

GETTING READY:

Grease and line springform pan with parchment paper.

 

MAKING:

In a food processor, crush the cookies into crumbs.

Add melted butter and pulse until combined.

Transfer the mixture to pan and press well. Allow to chill until firm.

In a cup, combine water and gelatin powder. Set aside.

In food processor, add cream cheese, sugar, vanilla extract, cream and process until well combined. Add melted chocolate, gelatin mixture, crushed tim tam and mix well.

Pour over chilled crust and chill until set. Garnish with more crushed cookies.
