Fresh mango is combined with cream cheese, sugar and gelatine, then poured over a cookie base. Chilled until set, this rich, creamy cheesecake is guaranteed to impress everyone you serve it to - give it a go!
|Cream cheese||500 Gram|
|Castor sugar||2/3 Cup (10.67 tbs) (Super Fine White Sugar)|
|Boiling water||1/4 Cup (4 tbs)|
|Gelatine powder||1 Tablespoon|
|Whipping cream||300 Milliliter|
|Sweet cookies||125 Gram|
|Butter||75 Gram , melted|
|Fresh mango||500 Gram (plus extra for garnish)|
Grease and line springform pan with parchment paper.
In a bowl, combine crushed cookies, butter and stir well.
Transfer the mixture to pan and press well.
Refrigerate for a while.
In a bowl, combine boiling water, gelatin and mix well. Set aside to cool.
In a blender, combine butter, sugar, mango, cream, gelatin mixture and process until smooth.
Pour the mixture over base and chill for 6 hours.
Garnish with mango slices.
