No Bake Mango Cheesecake

No Bake Mango Cheesecake is a heavenly dessert, perfect for summer or when you need a touch of summer in your life! Fresh mango is combined with cream cheese, sugar and gelatine, then poured over a cookie base. Chilled until set, this rich, creamy cheesecake is guaranteed to impress everyone you serve it to - give it a go!


Cream cheese 500 Gram
Castor sugar 2/3 Cup (10.67 tbs) (Super Fine White Sugar)
Boiling water 1/4 Cup (4 tbs)
Gelatine powder 1 Tablespoon
Whipping cream 300 Milliliter
Sweet cookies 125 Gram
Butter 75 Gram , melted
Fresh mango 500 Gram (plus extra for garnish)



Grease and line springform pan with parchment paper.



In a bowl, combine crushed cookies, butter and stir well.

Transfer the mixture to pan and press well.

Refrigerate for a while.

In a bowl, combine boiling water, gelatin and mix well. Set aside  to cool.

In a blender, combine butter, sugar, mango, cream, gelatin mixture and process until smooth.

Pour the mixture over base and chill for 6 hours.

Garnish with mango slices.



Serve and enjoy!
