Cookies and Cream Mini Cheesecakes is the perfect indulgent dessert for all cookie lovers. Cream cheese is combined with sugar, eggs, vanilla and crushed cookies, then baked in a muffin pan. Served chilled, these delectable little treats are perfect for sharing at parties - give it a go!
Cream cheese | 375 Gram (at room temperature) | |
Castor sugar | 1/3 Cup (5.33 tbs) (super fine white sugar) | |
Vanilla extract | 2 Teaspoon | |
Whipping cream | 1/2 Cup (8 tbs) | |
Eggs | 2 | |
Oreo cookies | 20 , 8 cookies broken |
GETTING READY:
Preheat oven to 325°F/ 160°C.
MAKING:
In an electric mixer, beat together cream cheese, castor sugar and vanilla extract until smooth.
Add whipping cream and mix well.
Add egg and beat well.
Fold in broken cookies.
Place cookies into muffin tray and top with prepared mixture.
Pop into oven and bake for 20 minutes. Allow to stay inside oven and cool completely.
Pop into refrigerator and allow to chill for 3 hours.
