No-Bake Lime Cheesecake With Popping Candy Crumble

Masterchef runner up Jack Lucas is back with his tasty Winter Warmers series and in this episode he shows you how to prepare this beautiful lime cheesecake that involves no cooking time!


Double cream 300 Milliliter
Icing sugar 3 Tablespoon
Soft cream cheese 250 Gram
Lime 1 , zested and juiced
Vanilla bean paste 1 Tablespoon
Digestive biscuits 8
Caster sugar 6 Tablespoon
Butter 75 Gram
Popping candy 2 Tablespoon
Mint leaves 5 (to Garnish)
Blueberries 100 Gram
Strawberries 100 Gram
Blackberries 50 Gram
Sugar 3 Tablespoon
Creme de cassis 2 Tablespoon



Mash the biscuits into crumbs using rolling pin.



Heat a saucepan, and melt sugar to form caramel.

Melt  butter, biscuits crumbs and mix well. Allow to cool,

For fruit coulis, heat a saucepan and melt sugar to form caramel. Add blueberries, strawberries, blackberries, lime juice with crème de cassis, mix well and allow to cool in a bowl.

In a large bowl, combine cream cheese, icing sugar, lime juice, lime zest and mix well. In another bowl, whisk vanilla paste and cream until softness peaks. Add cheese mixture with cream mixture.

To serve, assemble biscuit crumbs on a plate and top with popping candy as shown in the video.
