Lime | 1 , zested and juiced | |

Digestive biscuits | 8 | |
Caster sugar | 6 Tablespoon | |

Strawberries | 100 Gram | |

GETTING READY:
Mash the biscuits into crumbs using rolling pin.
MAKING:
Heat a saucepan, and melt sugar to form caramel.
Melt butter, biscuits crumbs and mix well. Allow to cool,
For fruit coulis, heat a saucepan and melt sugar to form caramel. Add blueberries, strawberries, blackberries, lime juice with crème de cassis, mix well and allow to cool in a bowl.
In a large bowl, combine cream cheese, icing sugar, lime juice, lime zest and mix well. In another bowl, whisk vanilla paste and cream until softness peaks. Add cheese mixture with cream mixture.
To serve, assemble biscuit crumbs on a plate and top with popping candy as shown in the video.
