Monies Farcies Bretonne


Large mussels 2 Quart (5 cups)
Unsalted butter 8 Ounce (1 cup / 225 g)
Onion 1 Large , finely chopped
Garlic 3 Clove (15 gm) , crushed
Parsley 1 Tablespoon , chopped
Fresh white breadcrumbs 2 Ounce (1 cup / 50 g)
Parmesan cheese 1/2 Ounce (40 g / 1/3 cup)
Dry white wine 4 Fluid Ounce (100 ml /1/2 cup)



1. Start by preheating the oven to 350°F

2. Take the mussels and wash and scrub the mussel shells under cold water then remove beards and discard any open shells.


2. In a steamer, place the mussels along with boiling water

3. Cover with a lid and steam for 2-3 minutes till the mussel shells just open

4. Stir till shells are steamed, also remove from the heat.

5. Break off the empty half of each shell and place the filled halves on a board, meanwhile cream the butter with the onion, garlic, parsley and pepper and spread a little into each shell and arrange close together in 6 individual ovenproof gratin dishes

6. Sprinkle with breadcrumbs and cheese mixed together, spoon over the wine and chill it

7. On a baking sheet, place the dish, cover with foil and cook for 15-20 minutes at 350°F, then remove the foil and continue cooking for a further 5 minutes to brown


8. Serve with French bread
