Chicken Breasts Stuffed with Goat Cheese

Sharp goat cheese 3 Ounce (Use Soft Variety)
Chopped garlic in oil 1/2 Teaspoon (Or Minced)
Chopped fresh basil 1/2 Tablespoon
Lemon juice 1 Tablespoon
Freshly ground black pepper To Taste
Whole chicken breasts 12 Ounce , skinless and boneless (To Make 4 Breast Halves)
Olive oil 2 Tablespoon
Dry white wine/Dry vermouth 6 Tablespoon
Basil leaves 8 (A Few, For Garnish)



1. In a food processor put goat cheese, garlic, basil, lemon juice and pepper and blend it.

2. Divide the goat cheese mixture in 4 equal parts and spread it evenly on each breast.

3. Fold the breasts over and press the edges to seal.

4. In a skillet heat oil and cook the breast until well browned on both sides.

5. Reduce the heat; add wine, put on the lid and let it cook for 10 minutes or until chicken is cooked through.


6. Garnish with basil leaves and serve with the sauce and some French or Italian bread.
