Pancakes with Cottage Cheese Filling

Eggs 3
Flour 1 Cup (16 tbs)
Milk 1 1/3 Cup (21.33 tbs)
Salt 1/4 Teaspoon
Cottage cheese 1 Pound
Eggs 2
Vanilla 1/2 Teaspoon
Sugar 1 Teaspoon
Cinnamon 1/2 Teaspoon



1) Into a bowl, mix together the eggs, half the water, flour, salt

2) Blend well using a fork and add the remaining water

3) Allow the batter to rest while making the filling

4) For the filling, into a bowl, combine the cheese eggs, cinnamon

5) Beat till everything is combined using a fork

6) Grease an 8 inch skillet with butter

7) Place on the stove and pour enough batter to coat the bas of the skillet

8) Allow the under side to fry well before turning out

9) Turn out onto a kitchen towel

10) Repeat till the batter is all used up

11) Place a heaped teaspoonful of the filling onto the centre of the pancake

12) Close the edges like that of an envelope and place the filled pancakes into a casserole

13) Cling wrap and place into the refrigerator to chill thoroughly if not using immediately

14) Into a skillet, dab in some butter and sauté the pancake on both sides till browned

15) Alternatively the pancakes ca be baked in a preheated oven for 35 minutes at 350 F


16) Serve warm with some clotted cream, blueberry or strawberry sauce
