Cheese Souffle

Ingredients

Butter 4 Tablespoon
Flour 3 Tablespoon
Milk 1 Cup (16 tbs)
Salt 1/2 Teaspoon
Pepper 1 Dash
Dry mustard 1/4 Teaspoon
Sharp cheddar cheese/Swiss cheese 1 Cup (16 tbs) , shredded
Eggs 4 , separated
Cream of tartar 1/4 Teaspoon
Grated parmesan cheese/Fine bread crumbs 1 Tablespoon

Directions

GETTING READY

1. Preheat oven to 375°.

MAKING

2. In 1-quart saucepan melt 3 tablespoons butter.

3. Add flour and stir over heat for few minutes.

4. Add milk and stir over medium heat until thick.

5. Mix salt, pepper and mustard.

6. Add cheese and let it cool.

7. Beat in egg yolks.

8. In a medium-size bowl beat egg whites until frothy.

9. Beat cream of tartar with eggs and continue beating until soft peaks form.

10. Blend egg whites into cheese sauce and gently fold in remaining whites.

11. Grease a 1 1/2- or 2-quart souffle dish with 1 tablespoon butter.

12. Sprinkle Parmesan cheese over it.

13. Spoon souffle into dish.

14. Bake for 25 to 30 minutes until puffed and golden.

SERVING

15. Serve souffle immediately, with sauce.
