Blue Cheese Blintzes

Eggs 2
Ricotta cheese 1 Cup (16 tbs)
Bleu cheese 2 Ounce , crumbled
Shallots 2 , thinly sliced
Yogurt 1/2 Cup (8 tbs)
Unbleached white flour 1/2 Cup (8 tbs)
Butter/Walnut oil 2 Teaspoon
Sour cream 3 Tablespoon



1. Preheat over to 350°F.

2. Divide 1 egg into 2 mixing bowls.

3. Butter a 1 1/2- quart baking dish.


4. Combine ricotta and bleu cheese to yolk bowl and add shallots; set mixture aside.

5. Break second egg into egg white bowl and beat lightly with yogurt and fold in flour.

6. In a saucepan over medium-high temperature, melt 1/2-teaspoon butter until foamy.

7. Pour in 3 tablespoons of the flour mixture, tilting pan coat on all sides (it should make a more or less circular, thin pancake).

8. Cook for about 1 minute on one side only, until edges of pancake are dry and starts to come up.

9. Remove from pan to a plate, put 2 tablespoons filling on uncooked side, then fold, pulling up sides first, then tucking both ends under make a fat little pillow.

10. Repeat this until you run out of either filling or blintz mixture, tucking blintzes snugly into buttered baking dish.

11. Bake at 350°F for about 20 minutes, until warm through and pale golden brown.


12. To serve, put 2 blintzes on each plate, top with sauce.
